Pork and Waffles
Seasoned Pork Belly
Ingredients:
- 1 Package Sear & Serve Seasoned Pork Belly
Directions:
- Preheat oven to 300ºF
- Cut Sear & Serve Seasoned Pork Belly into 2½-inch cubes
- Add small amount of oil and heat skillet over medium high heat until oil starts to smoke
- While shaking the pan transfer pork belly into pan and sear on first side for 3+ minutes until golden brown.
- Flip to next side
- Repeat until all sides are seared
Cranberry Sauce
Ingredients:
- 12 oz cranberry
- 1 large orange
- ¾ cup sugar
- 1 tsp salt
Directions:
- Pour cranberries and sugar into saucepan
- Rinse orange well and using micro plane, zest approximately half into saucepan
- Split orange and juice into measuring cup
- Add enough water to have 1 cup total liquid
- Add to saucepan and cook over medium heat approximately 10 minutes until cranberries have popped
- Transfer to heat-safe bowl and allow to cool (can be made ahead)
Waffles
Ingredients:
- 1 box cornbread mix
- 100g roasted shelled chestnuts
- 1tsp fresh ground black pepper
- 6 large sage leaves (chiffonade)
- 2 eggs (separated)
- ½ cup milk
Directions:
- Whip egg whites into stiff peaks
- Mix all other ingredients
- Fold mixture into egg whites
- Cook in waffle maker
- Hold waffles in warm oven until all waffles are cooked
