Pork and Waffles

Seasoned Pork Belly

Ingredients:

  • 1 Package Sear & Serve Seasoned Pork Belly

Directions:

  1. Preheat oven to 300ºF
  2. Cut Sear & Serve Seasoned Pork Belly into 2½-inch cubes
  3. Add small amount of oil and heat skillet over medium high heat until oil starts to smoke
  4. While shaking the pan transfer pork belly into pan and sear on first side for 3+ minutes until golden brown.
  5. Flip to next side
  6. Repeat until all sides are seared

Cranberry Sauce

Ingredients:

  • 12 oz cranberry
  • 1 large orange
  • ¾ cup sugar
  • 1 tsp salt

Directions:

  1. Pour cranberries and sugar into saucepan
  2. Rinse orange well and using micro plane, zest approximately half into saucepan
  3. Split orange and juice into measuring cup
  4. Add enough water to have 1 cup total liquid
  5. Add to saucepan and cook over medium heat approximately 10 minutes until cranberries have popped
  6. Transfer to heat-safe bowl and allow to cool (can be made ahead)

Waffles 

Ingredients:

  • 1 box cornbread mix
  • 100g roasted shelled chestnuts
  • 1tsp fresh ground black pepper
  • 6 large sage leaves (chiffonade)
  • 2 eggs (separated)
  • ½ cup milk

Directions:

  1. Whip egg whites into stiff peaks
  2. Mix all other ingredients
  3. Fold mixture into egg whites
  4. Cook in waffle maker
  5. Hold waffles in warm oven until all waffles are cooked
